These are so wonderful for a quick and easy dinner – on the fly! I’ve been making them off and on since ’06 and we love them just as much each time. You can safely get away with not measuring any of the ingredients – it’s that easy! Also a great opportunity to let the little ones make their own pizzas – be creative and add some toppings!
what you’ll need …
2 tsp olive oil
1 tsp. italian seasoning mix
1 tsp. balsamic vinegar
1 clove garlic, minced
4 pita bread rounds (no pocket)
2 plum tomatoes, thinly sliced
4 oz (1 c) shredded mozzarella cheese
2 Tbsp. fresh basil, thinly sliced
what you’ll do …
Preheat oven to 425 degrees. In small bowl, combine oil, italian seasoning, vinegar & garlic. Place pitas on baking stone or baking sheet. Brush each pita with seasoned oil; top with tomato slices & cheese. Bake 12 minutes; remove & sprinkle with basil.
